Recipe Edition: Kale and Berries Smoothie 'Soup'

It was Labour Day yesterday, and as you know, a long public holiday for us Singaporeans (wheee!). I tend to eat unhealthy whenever it gets to the holidays, and end up regretting that I do, especially when my breakfast is a sinful fried beehoon and/or roti prata! (YUMS, though)

So, this morning, I decided to wake up make myself a smoothie 'soup'. Why soup? Actually, it's a smoothie in a bowl, but the consistency I like it a little more creamy and soupier, since I'm Cantonese. I didn't want it to be too thick as well.

Also, I like to do this in the morning for breakfast, simply because our bodies needs to eat right in the morning. It's good to feed it nutrients and let give it ample time to burn off the sugar intake, throughout the day.

In the case of this smoothie soup, it's the sugar from your berries and banana that is the better kind of sugar to eat and burn away, rather than on-the-shelf sugars that go into your meals.

To be honest, what better sugar than fruit sugar, to fuel your morning right?

Ingredients: 
- 1 cup of unsweetened soy milk (some prefer to use almond milk, I use soy. Use any milk you like, to be honest.)
- 1.5 cup of chopped kale (or any vegetables you like, like spinach, etc.)
- 1 cup of mixed berries (I used strawberries and blueberries only this time)
- 1/2 Jumbo Banana
- 1 to 2 teaspoons of maple syrup / honey (if you like it sweeter. This is optional. I used 1 teaspoon of maple syrup for mine)

Toppings: 
- The remaining half of the jumbo banana
- Blueberries
- Strawberries
- Almonds
- Chia seeds (if you're up for it. Not overly though, I recommend 1-2 teaspoons)

Directions: 
- Put the kale and half the milk into the blender. Blend until your preferred consistency.
- Put in the berries, banana and the maple syrup in the mix. Blend. Don't overly blend it, if you don't want such too smooth a consistency. Add in half the remaining milk.
- It should look slightly thick now, but all blended well.
- Add in the rest of the milk and give it one last blend till slightly frothy.
- Pour out, garnish and enjoy. :)

Tips: 
- Freeze your banana, berries and preferred vegetables (or make sure it is well chilled) before you blend.
- Don't put too much milk / vegetables at a go (at least, I don't like to do that so I can control the consistency later on)
- If you like your soup thicker, add more banana and less milk

I only used about 2 stalks for 2 bowls of smoothie soup!

This recipe has a stronger kale taste, you have been warned! But I love it because it tastes so healthy and packs a good nutritious punch.
