Maxwell's Newest Must-Try: Hock Lai Seng 福来成 Bak Chor Mee

Hock Lai Seng (Fu Lai Cheng in Chinese) Teochew Fishball Bak Chor Mee is a new stall that has opened shop at Maxwell Food Centre. This stall is run by the grandson of Ah Ter Fishball Noodles hawker, and it has become quite popular in just a couple of months since its opening.


Being a fan of good fishball bak chor mee, I decided to give this stall a try. However, when I arrived around 11.45 am, I already encountered snaking queues.

Despite the long queues, I was impressed by the young 22-year old owner, who personally cooked up every bowl of noodles. The menu at Hock Lai Seng is pretty straightforward - there are 2 options basically - soup or dry bak chor mee in various sizes, all of which comes with handmade fishballs! 


Customers can choose from eight types of noodles. Usually for bak chor mee, people either go mee kia or mee pok. Mee pok isn't my favourite, so I went with mee kia! 

The cheapest priced bak chor mee goes for SGD$4.50, and it comes with two fishballs, sliced fishcake, braised mushroom, minced pork and lard. To make it worth my queuing time, I went for their SGD$6 medium version, which comes with extra ingredients such as prawn, meatball, pork and liver slices. The $6 version also seems like quite the popular choice with their customers. 



As I chowed down on the noodles, I felt the sauce was well-balanced and the noodles had a springy texture, solid bite, singing in harmony with the delicious sauces which included sambal and braised mushroom sauce. The icing on the noodles (not cake) is the addition of crispy pork lard and spring onion toppings, which enhanced the flavours even more. By the way, you can ask them to exclude vinegar if you're not into it. As for me, I told them to go light on the vinegar. It's just a personal preference.

The soup that came with the bowl of noodles were notably also slurp-worthy. 

Overall, my experience at Hock Lai Seng was a good one, and I will definitely be back for more. If you're a fan of fishball bak chor mee, you probably shouldn't miss giving this stall at Maxwell Food Centre a try.
