Recipe Edition: Avocado Lemon Prawn with Tofu

As you all know, I've been trying to have something healthy and less carbs recently. I love rice, so diet sometimes can be difficult. With this dish, I'm using tofu to replace rice, and is naturally gluten-free and has low calories, no cholesterol and is an great source of protein! So here goes!

Avocado Lemon Prawn with Tofu (Serves 2)
- 2 Avocados
- 1 Lemon
- About 20 prawns
- A slab of silky soft tofu
- 2 tsps of Black Pepper
- 2 tsps of Parsley Flakes
- Olive oil

1. Cut the avocado, unseed it and dig out its flesh.
2. Mash the flesh well.
3. Put all lemon juice into the mashed avocado and mix well.
4. Throw in the parsley flakes and mix.
5.Wash, deshell and devein prawns. Set aside.
6. Steam the tofu plain. I let mine steam for about 10 minutes.
7. Heat some olive oil in non-stick pan.
8. Throw in some crushed ginger and let it sizzle till it starts to get golden brown.
9. Put in the prawns and after they start to turn colour (orange), then put in the avocado mix.
10. Mix the prawns and avocado mix well let them cook, till the avocado heat (about 2-3minutes).
11. Lay the cooked prawn and avocado mix on top of the tofu and top it up with some black pepper, you're done!

I really liked this recipe! Try this if you wish to have a filling, good meal with less carbs. :)
